I went Vegetarian for a week…wasn’t that bad...7 Easy Recipes

I’m a person for lists and goals. At the beginning of the year, I like to set 20-30 things I would like to accomplish this year and I then parse those things into 3-4 to do each month to make sure I stay on track in achieving those ‘goals’.One of the things I wanted to do this year was to go an entire week with no meat! It seemed like a big deal to me considering my love for a good medium steak or juicy burger. To give that up for a week? What was I going to do? It’s been on my monthly ‘to-do’ list since April and I decided to go ahead and get it over with, it can’t be that bad right?With my determination in mind, I set out to Pinterest and AllRecipes to get some good vegetarian recipes.  A couple of weeks ago, my sister had introduced me to tofu and though I wasn’t completely sold on ‘coagulated soybeans’ , I figured I would at least give it a try for a recipe or 2. Here was my menu for the week:Sage Green Floral Pattern Meal Planner Menu I added tofu to my Veggie Quesadillas and Ravioli. With the exception of Sunday (day 1 and husband wanted to go to Bonefish Grill for brunch!!), I didn’t miss meat as much as I thought I would. I didn’t have any cravings for a steak or burger but more so wanted to fill up on veggies and beans and oats to make sure I was getting the protein and vitamins I needed. The great thing was that I lost 3 pounds in a week! Weight loss wasn’t something that I was looking for as a goal but it was a great bonus. I’ve decided to continue a slight variation of this vegetarian lifestyle….no! I’m not going vegetarian for life, but I am starting to add more veggies and tofu/quinoa into my meals and making meat a last resort. Between ‘What the Health’ (Netflix documentary) and the fact that I didn’t crave meat as much as I thought I would, I think this could be something that could be long term. And hey!
